Ingredients
- 18 L Ponkan Orange Sacs
- 500 grams of caster sugar (adjust according to your preference for sweetness)
- 2 tablespoons of lemon juice
- A pinch of salt
Equipment
- Blender or food processor
- Fine - mesh sieve
- Saucepan
- Whisk
- Ice cream maker
- Freezer - safe container
Step - by - Step Instructions
Step 1: Prepare the Orange Puree
Start by opening the 18 L Ponkan Orange Sacs. Pour the contents into your blender or food processor. Blend until you get a smooth and well - combined puree. This puree forms the base of your sorbet, capturing the essence of the fresh ponkan oranges.
Step 2: Strain the Puree
Place the fine - mesh sieve over a large bowl. Pour the orange puree through the sieve. Use a spoon to press the puree through the sieve, ensuring that any seeds or unwanted solids are removed. This will result in a smoother and more refined sorbet texture.
Step 3: Make the Simple Syrup
In a saucepan, combine the caster sugar and an equal amount of water (about 500 ml). Place the saucepan over medium heat. Stir constantly with a whisk until the sugar has completely dissolved. Once the sugar is dissolved, bring the mixture to a boil for about 2 - 3 minutes. This simple syrup will not only add sweetness but also help prevent the sorbet from freezing into a solid block.
Step 4: Combine the Ingredients
Remove the saucepan from the heat and let the simple syrup cool slightly. Pour the cooled simple syrup into the bowl with the strained orange puree. Add the lemon juice and a pinch of salt. Stir well to combine all the ingredients thoroughly. The lemon juice adds a tangy note that balances out the sweetness of the oranges, while the salt enhances the overall flavor profile.
Step 5: Churn in the Ice Cream Maker
Pour the sorbet mixture into an ice - cream maker. Follow the manufacturer's instructions to churn the mixture. The churning process usually takes about 20 - 30 minutes, during which the sorbet will gradually thicken and develop a creamy texture. As the ice - cream maker does its job, air is incorporated into the mixture, giving the sorbet its light and fluffy consistency.
Step 6: Freeze the Sorbet
Once the sorbet has reached the desired consistency in the ice - cream maker, transfer it to a freezer - safe container. Cover the container tightly and place it in the freezer. Let the sorbet freeze for at least 2 - 3 hours or until it is firm enough to scoop.
Tips for a Perfect Ponkan Orange Sorbet
Adjusting the Sweetness
Ponkan oranges vary in sweetness, so you may need to adjust the amount of sugar according to your taste. If the oranges are already very sweet, you can use less sugar. You can also taste the sorbet mixture before churning and make any necessary adjustments.
Flavor Enhancements
If you want to take your ponkan orange sorbet to the next level, you can add some flavor enhancements. For example, you can add a tablespoon of orange liqueur such as Cointreau or Grand Marnier for an extra citrusy and boozy kick. Alternatively, you can add some fresh mint leaves or a sprinkle of cinnamon for a unique flavor twist.
Serving Suggestions
Ponkan orange sorbet can be served on its own in a chilled bowl or glass. You can also top it with some fresh ponkan orange segments, a drizzle of honey, or a dollop of whipped cream. It pairs well with other desserts such as chocolate cake or almond cookies.
